Professor Weinstein practiced in the areas of environmental law and consumer protection in the office of the California Attorney General. She then taught at the University of San Diego, where she created the country's first environmental law clinic. At California Western, Weinstein directs the Clinical Internship Program and the JD/MSW Dual Degree Program in Child Welfare.

Over the years, Weinstein's interests grew in the areas of alternative dispute resolution, child welfare, and family law. In recent years, she has focused on the connection between the law and neuroscience.  She was a member of the San Diego Bar Association's Task Force on the Unmet Needs of Children and the Standing Committee on Children at Risk, and she served on the San Diego Juvenile Justice Commission.  Weinstein served on the boards of the Casey Family Program Community Resource Council, San Diego Advocates for Social Justice, and Kids' Turn.  She performs pro bono work in the area of special education.
